Instructions

  1. Add 1 cup of blanched almonds to a baking tray lined with parchment paper and make sure they´re all in a single layer, add to a preheated oven, bake + broil option 210 C – 410 F between 6 to 7 minutes, then remove from the oven and transfer to a bowl
  2. Add 1 cup of all-purpose flour into a large bowl, along with 1 tsp of baking powder, a 1/4 cup of granulated sugar and a 1/4 tsp of sea salt, mix the dry ingredients together, then add in the roasted almonds, a 1/4 cup of honey and 1 large organic egg, mix together until well combined

3 cups of oatmeal 1 cup flour 1 cup lard 1 cup brown sugar 1 teaspoon of salt 1 teaspoon Soda (bicarbonate of soda) Quarter cup of cold water Mix all dry ingredients Rub in lard. also possible to use butter and not lard Add water last and make dough. Roll it out then cut it into cookie size pieces, then bake in 350 oven 10 minutes. This recipe is from Margaret Jane Davis. Dated from the early 1940s. AN OTHER EASY BISCUIT / COOKIES RECIPE, SO LIGHT AND TASTY.. INGREDIENTS 400 GRAMS OF ALL PURPOSE FLOUR 150 GRAMS OF BUTTER AT ROOM TEMPERATURE 100 GRAMS OF SUGAR 200 GRAMS OF PLAIN YOGHURT PINCH OF SALT TEASPOON OF BAKING POWDER TEASPOON OF VANILLA MIX IT ALL TOGETHER INTO A SOFT DOUGH, PLACE IT IN A FREEZER BAG, AND PLACE IN THE FRIDGE FOR HALF HOUR TO REST. ONCE RESTED TAKE IT OUT, DUST YOUR SURFACE WITH FLOUR AND ROLL OUT YOUR DOUGH, AND CUT THEM INTO SHAPES, PLACE ON TO YOUR GREASED BAKING TRAY, AND SPRINKLE WITH SUGAR ON TOP. INTO PREHEAT OVEN AT 180 DEGREES FOR 10 to 15 MINUTES OR UNTIL PALE COLOUR. ENJOY..

Polvorones Spanish Sugar Cookies

My family love these sugar cookies. They are very easy to make and they are not too sweet. The recipe is as follows: 3 cups flour 1/8 tsp salt 1/2 cup of butter 1/2 cup of crisco 2 tsp of Vanilla (optional) 1 egg Cream the crisco and butter together until smooth. Add sugar eggs and vanilla extract. Beat until creamy. Add salt to flour then add flour to butter mixture and combine until it forms a dough. Shape cookies into a ball, press the center and add the pasta de Guayaba on top of each cookie. Bake in a 350 degree oven for 10 minutes. Check on the cookies and add between 1 -2 minute at a time until the cookies are lightly brown on the edges. Bake for no more than 15 minutes. I hope you enjoyed the video and recipe

Greek Butter Cookies/ Koulourakia

Makes about 80 cookies: ​1 pound unsalted butter at room temperature 1 and 1/2 cups granulated sugar ​4 whole eggs 2 egg yolks 1/2 cup heavy whipping cream zest of 2 large lemons ​2 teaspoons pure vanilla extract 1/2 teaspoon salt 1 teaspoon baking powder ​6 and 1/2 -7 cups all purpose flour ​egg wash: 4 egg yolks  plus 4 tablespoons water ​In a tabletop mixer with the paddle attachment, beat the butter with the sugar until fluffy. ​Add the vanilla extract and beat until incorporated. ​Beat the eggs and yolks with the sugar mixture until fluffy. ​Add the heavy whipping cream and beat well. ​Sift together the flour, salt, and baking powder. ​Zest the lemons over the flour mixture and mix to combine. ​Add the flour mixture in a few batches while the mixer is beating all of the ingredients on a low speed. ​Beat until well combined. Check the dough and add 1/2 cup more all purpose flour if needed to form dough that is not  very sticky and so that it is easy to work with. Set aside and cover with a clean towel. ​Allow the dough to rest at room temperature at least 30 minutes. ​Preheat oven to 400 degrees Fahrenheit, 204 degrees Celsius. ​Form the dough into walnut, or golf ball sized rounds. Roll each round out into about 8 inch cylinders. Fold in half and twist until a braid forms. Place onto a baking sheet lined with parchment paper. Continue until all of the cookies are formed. ​To make the egg wash, combine the egg yolks with water and whisk well until smooth. ​Brush the egg wash over each cookie. ​Bake 20-30 minutes or until the cookies are golden brown. Rotate trays (place the bottom tray on the top rack and the top tray on the bottom for even baking) halfway through baking. Allow the cookies to cool completely. Store them in an airtight container. Serve with tea or coffee. ​Enjoy!
