Shrimp Mozambique
Shrimp Mozambique.
Serves about 4.
1-1 ½ lbs shrimp, peeled with the tails left on.
¼ cup extra virgin olive oil.
1 finely chopped onion.
1-2 tbsp freshly minced garlic.
1 tbsp fresh parsley.
2 packets Sazon.
½ stick of butter.
10 oz Budwiser beer or Pinot Gregio Wine.
1 tbsp crushed red peppers (wet).
1-10 drops Tabasco.
Salt & pepper (to taste).
2 cups cooked rice.
In small bowl, combine, garlic, parsley, S & P, Tabasco, red peppers and Sazon and set aside. In large frying pan (with cover), heat oil and butter over medium heat.
Add onion and sauté for about 5 mins. Add ingredients of bowl, cook for about 2 more minutes.
At this point, you want to try to mash the onions to thicken the sauce. Add beer or wine, cover and simmer for about 3 mins.
Remove lid and mash a little more. Add shrimp, cover and cook for about 3-5 minutes on each side. Serve over rice!!
