How to cook Mussels

Mussels are relatively easy to prepare.

The main thing with mussels is to purchase them from a fish supplier who does a lot of turnover so that the mussels will be fresh; smell them; if they smell ‘off’ they’re not fresh; they should have no smell or only a smell like a sea breeze.

Spanish Mussels Recipe

This is an easy dish that is so flavourful it will WOW your guests!

Recipe:

Yields: 4-5 servings Ingredients: ½ medium yellow onion, chopped 2 red bell peppers, chopped 2 green bell peppers, chopped 2 cans of diced tomatoes 2 garlic cloves, minced 3 Tbsp avocado oil 1 Tbsp smoked paprika 8 oz spicy Spanish chorizo, chopped 3 lbs fresh mussels, scrubbed and debrated 2 cups vegetable or seafood stock ¾ C white wine Salt to taste

Instructions:

1. In a large saucepan at medium heat, add oil and sauté onions and peppers until soft, about 5 minutes.

Add the garlic, paprika and chorizo to the onions and cook until the sausage loses its raw color, about 5 minutes.

2. Turn heat to high and once fragrant, deglaze the pan with the wine and bubble for a minute.

Lower the heat to medium, add the veggie or seafood stock and bring to a simmer.

Season to taste, add the prepped mussels and cover to steam until the mussels open, 3 to 4 minutes.
